The store name "TSUBAKI" comes from the deep connection with koji mold.In the past, camellia ash was used to grow koji mold. It was mixed with rice to make it alkaline, eliminating harmful bacteria and allowing only the koji mold to survive.We named it "Tsubaki" to express our desire to protect Japan's traditional culture, history, people's health, and the future of the world through the power of koji mold and fermentation.
